A Summer Staple
Pesto is one of our absolute favorite things to eat. It can give a simple grilled cheese sandwich or a pasta dish that little something extra. I decided to try my hand at making it fresh since I have an abundance of basil growing on my balcony. It really is the easiest thing to whip up! I followed this recipe, omitting the parsley and scaling back on the garlic a bit. I decided serve it in a pasta dish with fresh tomatoes and grilled chicken. Needless to say it was delicious (or in Austin's words, "Mmmm babe this is soooo good" and "why haven't we done this before?!"). This will most certainly be a recipe that will be sticking around :)
